Easy Coconut Macaroons
I never knew how easy it was to make macaroons! I found this recipe in my Real Simple magazine (love love love that publication). Literally took 10 minutes of prep. I’ve posted it here to share:
Ingredients
3 large egg whites
1/2 cup sugar
1/2 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
1 14-ounce package sweetened shredded coconut (about 5 cups)
Directions

The Best Way To Explore Pike Place Market
Pike Place Market (aka “The Soul of Seattle”) is one of Seattle’s most popular tourist destinations and a beloved local gem. It’s “home to more than 200 year-round commercial businesses; 190 craftspeople and approximately 100 farmers who rent table space by the day; 240 street performers and musicians; and more than 300 apartment units…”

Kimchi Pancakes
fritesandfries:
Great late-night Korean cuisine is definitely one of the things I miss about New York. Chef and I used to order kimchi pancakes (a.k.a. kimchijeon) from this great 24 hour restaurant, Kunjip, all the time because it’s such a great snack/appetizer to share.
Kimchijeon is a fairly inexpensive dish to make because of the simple and basic* ingredients: flour, water, kimchi, sugar,...

Making Coffee... The Whole Nine Yards
What I love most about visiting Jonathan’s family in Hawaii is his father’s backyard garden. His dad grows everything from Hawaiian papaya, apple bananas, to turmeric and purple sweet potatoes! It’s always a treat to wake up to fresh fruit and vegetables on the table.
One of his newer editions to his garden was a Kona Coffee Tree. Jonathan, being the coffee connoisseur (or...

Seattle Fast-Forwarded 3 Months
When making big transitions in life, it’s nice to have some things constant, or in my opinion, reliable. When going through peaks and valleys, you know there are those things you can rely on no matter what.
If I were to map out my life, I would say that there have been three major transitions so far. The third and most recent transition has been moving to Seattle and adjusting to a...

Jo An Japanese: Who Would Have Guessed Kentucky
My company is headquartered in the Midwest, an area where people favor land-based animals as their meat of choice… which makes sense when you can’t get fresh seafood since there’s no access to water. Unfortunately, that becomes an issue for people like me who love sushi. Good news is, the best sushi spots are quickly noticed and then circulated around.
And that is how I...

Seattle: Land of the Summer Festivals
Source: Google Images
After speaking to many Seattlelites, there is one common thread in their message:
Take advantage of the summer like there’s no tomorrow. There may be a tomorrow, but probably no sun.
Fun fact: a vast majority of Seattlelites are deficient in Vitamin D.
Not surprising when the sun doesn’t come out to play from September to June…
So what does that mean...
